Preparing Freeze-Dried Foods

Most of our products can be eaten straight from the bag but there are those items that will shine brighter rehydrated in a tasty dish.

Preparing freeze-dried food is simple. All you need is moisture (water or broth) and some extra prep time. 

A common rule of thumb is to rehydrate freeze-dried food using a 1:1 liquid to food ratio.  Although, a 2:1 liquid to food ratio may be needed for powders and dense items.

There are several suggested methods of rehydration, but the following three are said to have great results:

  1. Spritz method - perfect for rehydrating delicate products such as berries, herbs, mushrooms and flowers.  Using a food grade water bottle, spritz freeze-dried items with cold water and set aside to absorb.  Repeat process as needed.
  2. Soak method - soak freeze-dried food in a 1:1 liquid to food ratio.  For example, soak 1 cup of broccoli in 1 cup of warm water.  If the water soaks in too quickly, feel free to add more water as needed.  Cover food and let soak in the refrigerator for up to 48 hrs depending on density.  Pour off any excess water and continue to prepare as fresh.
  3. Cooking method - Toss it in the pot!...of hot (not boiling) water or broth and prepare meal as usual. This method is perfect for soups and stir-fries, just make sure there is enough moisture to rehydrate your freeze-dried products.  It doesn't work to just sauté in butter as this can cause the food to burn. 
  4. Additional tip! - Powders can be added directly to a base such as yogurt and baked goods.
